Cooking classes are taught with step-by-step guidance from Chef Gina! Each month classes are added to the calendar and require pre-registration to ensure minimum number of students are attending and proper ingredients are available.

Description of Classes:

There are different classes available.  Recommended ages are based on experience in the kitchen. 

*Young beginner chefs are encouraged to join the class with their guardian for the Chef & Chef Jr. classes. Great for adults who are trying to encourage their younger chefs to learn new recipes while making delicious memories together.


*Those who have a bit of experience and are at least 10 years old should register for the Chef Jr. classes. There are two different classes focusing on either cooking or baking so be sure to check the planned recipe. Parents are welcomed to join for these classes however, not required if child is over 10 years old, has an interest in the kitchen and has assisted somewhat in the past. 


*Adult duos (singles, couples, family members, etc.) are welcomed to sign up for the Date Night Out classes. Leave the kids home and bond over a new experience. Bottled water is provided, however, you are welcomed to bring a beverage of your choice.

March 2023

Good Thymes Cooking Classes

Classes are held at either River Valley Arts Center (RVAC) or Poughkeepsie Underwear Factory (PUF); please take note of location when registering.  

 
* March 11 @ PUF, 6:30pm-9:30: Date Night Out 

Chef Gina’s Chimichurri Churrasco & Flan Crème Caramel 

- $150 per couple**

For this class, we begin with the dessert! Learn the tricks to a 

balanced flan with caramel from scratch. Then, we will create a 

flavor packed Chimichurri sauce, learn how to remove that chewy, fibrous part of the steak (and what it’s called), and work on some 

knife skills for our roasted vegetables.  

Bottled water is provided, however, you are welcome to BYOB!

* March 18 @ RVAC, 6:30pm-9:30: Date Night Out

Honey Roasted Grapes & Goat Cheese Crostini & 

Shepherds Pie Empanadas - $120 per couple

Learn how to make an easy yet flavorful appetizer. Then we'll create recipe fusion empanadas, from scratch and loaded with flavor. 

Bottled water is provided, however, you are welcome to BYOB! 

* March 19 @ RVAC, 1pm-3:00: Chef Jr: Let's Bake! 

Irish Soda Bread - $50 per person 

First class in the fresh breads collection. We will make this classic 

Irish Soda Bread with (or without) raisin or cranberries. Paired 

with a yummy lemon curd.


* March 19 @ RVAC, 3:30pm-5:30: Chef Jr: Let's Bake! 

~National Chocolate Caramel Day!~

Chocolate Lava Cake & Caramel Drizzle - $50 per person  

Each chef will make their own chocolate lava cake from scratch 

and learn the tricks to making a smooth caramel sauce. Served 

with vanilla bean ice cream. 


* March 26 @ RVAC, 1pm-3:00: Chef Jr: Let's Cook! 

~Knife Skills!~

Loaded French Fries - $50 per person 

After working on our knife skills for our prep, we will make a cheese sauce from scratch and sauté some bacon. Toppings will include scallions, ranch, sour cream, bacon, and cheese sauce. I am already looking forward to this class! Yum!

~Knife Skills!~

Stuffed Peppers - $50 per person 

Students will select their choice of adding Quinoa or Ground 

Turkey (or both) with tomatoes, black beans, and added toppings. Great class for those looking to learn dinner ideas.

Cheese Enchiladas - $50 per person

After we create a delicious enchilada sauce, we will roll it up in corn tortillas with cheese. [Please email if you are seeking a GF option]


* February 5 @ RVAC, 3:30pm-5:30: Chef Jrs: Let's Bake! 

Red Velvet Twinkies - $50 per person 

Learn how to make a yummy Twinkie, but Red Velvet! Or 

keep it traditional! Filled with a delicious marshmallow fluff.


* February 11 @ RVAC, 4pm-6:00: Chef & Chef Jr. 

Cheesy Crust Cheese Pies - $100 per duo

While our fresh made pizza dough rests, we will 

create Chef Gina's favorite marinara sauce. 

Top the dough with your favorite cheeses and enjoy!

Chef Gina's Fresh Sofrito Beef & Cheese Empanadas - $120 per duo

Back by popular demand! Let's make these empanadas from scratch and fill with my delicious sofrito beef picadillo with shredded cheese. Bottled water is provided, however, you are welcome to BYOB!

Raspberry Jam Filled Cupcakes with Buttercream - $50 per person

Sweets for your sweetie! A cupcake class for any beginner! Let's spruce up a traditional vanilla cupcake by adding a sweet raspberry jam and topping with a yummy buttercream frosting. Practice your piping skills!

Cheeseburger Fried Raviolis - $50 per person

What is your favorite ravioli filling? How about fried raviolis? I love a yummy cheeseburger, so let's pair with an easy shortcut and fry it!

Fresh Pasta Night!

Seared Chicken Thighs & Arugula Pappardelle - $120 per duo

I have definitely come to love these monthly pasta classes! Let's pair this with an easy app: Balsamic Glazed Caprese! Bottled water is provided, however, you are welcome to BYOB!

French Onion Soup Pull Apart Bread- $100 per duo

We will make a yummy French onion soup, pour onto a bread loaf, 

top with cheese then melt to perfection!

 
* January 7 @ RVAC, 6:30pm-9:00: Date Night Out 

Pancetta & Sage Risotto - $120 per duo 

Learn how to layer flavors to make a flavorful & creamy risotto. Paired with a shaved brussels sprouts salad. Bottled water is provided, however, you are welcome to BYOB. Chef recommends pairing this meal with your favorite wine.

After creating our filling from scratch, we will shape our gyozas and pan fry them until crispy, then.. join the class to find out!

Mac & Cheese Fried Wontons - $50 per person

Wontons are very versatile! This time we are filling them with Mac & Cheese! While we make our cheese sauce from scratch, we will also learn how easy it is to make marinara sauce.

Cheesecake Muffins - $50 per person

Air Fryer Cheesy Beef Egg Rolls - $50 per person

After we create the filling, we will roll into wrappers and air fry. San Marzano tomatoes with fresh basil & garlic come together to make a delicious marinara sauce.

Chocolate Lava Cake w/ Fresh Soft Serve Ice Cream - $50 per person

Which is your favorite flavor ice cream? Be sure to let the chef know in advance! We will make soft serve from scratch and while it freezes, we will bake off a delicious chocolate lava cake.

* December 4 @ RVAC, 3pm-5:00: Chef Jr.: Preteens & Teens Baking: Apple Cobble Bites w/ Fresh Ice Cream - $45 per person

We will make individual Apple Cobbler Bites and as they are baking, students will be able to make their choice of flavored ice cream from scratch. 

 
* December 10 @ PUF, 4pm-6:00: Chef & Chef Jr. Cooking Class: Honey & Cinnamon Buttermilk Biscuits - $45 per person

In this baking class, we will make the biscuit dough from scratch, learning about how to get the many layers and pack with flavor.   

 
* December 10 @ PUF, 6:30pm-9:00: Date Night Out Cooking Class: Fresh Spinach & Ricotta Ravioli with Vodka Sauce - $55 per person

We will enhance our pasta technique by making ravioli stuffed with a fresh spinach & ricotta cheese blend then toss in a vodka sauce and paired with a creamy scratch Caesar Salad. Bottled water is provided, however, you are welcome to BYOB!

 
* December 17  @ PUF, 4pm-6:00: Chef & Chef Jr. Cooking Class: Christmas Tree Pull Apart Cheesy Garlic Bread - $45 per person

Together with your younger chef, learn how to add a delicious appetizer to your upcoming family gatherings! Along with this twist on garlic knots, we will also learn how easy it is to make marinara sauce.

 
* December 17 @ PUF, 6:30pm-9:30: Date Night Out Cooking Class: Fresh Sweet Potato Gnocchi w/ Chicken & Kale Sausage - $55 per person

Another Fresh Pasta Favorite! Sweet Potato Gnocchi! Paired with a Chicken & Kale Sausage, we will toss this with a delicious Sage & Brown Butter Pecorino Sauce. Yum! Bottle water is provided, however, you are welcome to BYOB!

 
* December 18: Knife Skills Day! @ RVAC, 1:00pm-2:30: 

Chef & Chef Jr.: Cheesesteak Fried Wontons - $45 per person

Work alongside your young chef to encourage knife skills & safety to chop the needed ingredients in a twist on the crowd favorite Cheesesteak with a creamy cheese sauce. (If your Chef Jr has some experience with knife skills, guardian is not required)


* December 18: Knife Skills Day! @ RVAC, 3:00pm-4:30: Chef & Chef Jr. Cooking Class: Mini Chicken Pot Pies - $45 per person

After we practice our knife skills to mince the classic ingredients, we will create a chicken pot pie filling to stuff into cut pie crusts. These baked pies are sure to become a new favorite! (If your Chef Jr has some experience with knife skills, guardian is not required)

Learn helpful tips with your young chefs to take the guessing out of making chicken to perfection. We will also introduce knife skills as we chop fall vegetables to pair with the chicken. 

 
* November 5 @ RVAC, 6:30pm-9:00: Date Night Out Cooking Class: Cinnamon & Chile Spiced Seared Salmon - $50 per person

Bring a loved one to create this delicious recipe and learn a few tips to make the perfect salmon. 

 
* November 19 @ PUF, 4pm-6:00: Chef & Chef Jr. Cooking Class: Pumpkin Chili & Cornbread Muffins - $45 per person

Put a spin on the traditional chili and make it a fall favorite! By using the Instant-Pot, we will bring this dish to life, loaded with flavor!  

 
* November 19 @ PUF, 6:30pm-9:00: Date Night Out Cooking Class: Pumpkin Bacon Carbonara with fresh pasta - $50 per person

We will make fresh made pasta to toss with a pumpkin bacon carbonara and serve with roasted squash. Bring your own vodka or rum to add to a warm mulled apple cider. 

 
* November 20 @ RVAC, 1:00pm-3:00: Chef Jr.: Preteen Cooking Class: Butternut Squash Mac & Cheese - $45 per person

An easy way to wear your vegetables is by including it into your favorite dish! What young eater doesn’t like Mac and cheese? Your Chef Jr can learn to recreate their go-to dish from scratch with a twist! 

 
* November 20 @ RVAC, 3:30pm-5:30: Chef Jr.: Preteen & Teen Baking Class: Pumpkin Banana Bread Muffins - $45 per person

Add a twist to the crowd favorite banana bread by adding pumpkin and making it individual sized. So good it’s hard to eat just one! 

 
* November 26: Knife Skills Day! @ RVAC, 2:00pm-3:30: Chef & Chef Jr.: Intro to Knife Skills: Roasted Garlic & Pumpkin Hummus 

- $45 per person

For this class, we will go over an introduction to knife skills for you and your young/ beginner chefs as we make a seasonal crudité platter to serve with a delicious Roasted Garlic & Pumpkin Hummus. 

 
* November 26: Knife Skills Day! @ RVAC, 4:00pm-5:30: Chef & Chef Jr. Cooking Class: Apple Pie Dumplings - $45 per person

After we practice our knife skills to mince apples, we will create an apple pie filling to stuff into wonton wrappers. Chefs will learn how to pan fry the dumplings and make a caramel dip from scratch. 

 
* November 26: Knife Skills Day! @ RVAC, 6:30pm-8:30: Date Night Out Cooking Class: Knife Skills: Instant Pot Beef Stew- $50 per person 

Gather a loved one (or two) to work on your knife skills as we cut some veggies for an Instant-Pot beef stew with roasted potatoes. Bring your favorite vanilla vodka & spiced rum to make a Pumpkin Pie Martini after the knives are put away.

* October 16 @ RVAC, 3pm-4:30: Chef Jr.: Teens Cooking Class: Cinnamon Streusel Muffins - $45 per person

Breakfast, lunch, snacks, these muffins are deliciously easy to make


* October 22 @ PUF, 2:30pm-4:00: Chef & Chef Jr. Cooking Class: Red Velvet Vampire Cupcakes - $45 per person

Topped with cream cheese frosting and decorated with raspberry blood from a vampire bite


* October 22 @ PUF, 4:30pm-6:00: Chef & Chef Jr. Cooking Class:  Pan Fried Pumpkin Raviolis with Alfredo Sauce - $45 per person

We will use an easy technique that you can make at home for these pan fried pumpkin raviolis and toss them in an easy alfredo sauce   


* October 22 @ PUF, 6:30pm-8:30: Date Night Out Cooking Class:  Fresh Made Pumpkin Raviolis with a sausage & pepitas brown butter sauce and Pumpkin Puree Cocktail - $50 per person 

 We will use an classic technique to make pumpkin raviolis and toss them in a sausage & pepitas brown butter sauce. 

We will also create a pumpkin puree drink that you are welcome to add your own liquor to! Vanilla Vodka or Captain Morgan Rum goes great!

* October 29 @ RVAC, 4:30pm-6:00: Chef & Chef Jr. Cooking Class:  Halloween Pumpkin Mummy Muffins - $45 per person

Pumpkin spiced muffins are decorated in a mummy design with a cream cheese frosting  


* October 29 @ RVAC, 6:30pm-8:30: Date Night Out Cooking Class:  Apple Stuffed Pork Chops with Creamy Mashed Potatoes and Roasted Broccoli Rabe with a Sweet & Salty Rim Apple Cider - $50 per person  

A fall twist to a savory dinner, Chef Gina will teach you a few tricks to level up the date night favorite pork chops & mashed

We will also make a simple syrup to create a sweet & salty rim for a crisp apple cider which pairs great with your BYOB of choice such as green apple vodka & triple sec/lemon.

Pan Fried Dumplings - $40 per person

Vegan wonton wrappers are filled with fresh vegetables with the choice of adding pork, then pan fried and steamed. 


* September 3: Date Night Out 6PM 

Chimichurri Chicken Thighs with Yellow Rice & Roasted Vegetables - $45 per person BYOB

Chicken thighs are marinated with fresh made chimichurri. Practice knife skills when preparing the vegetables and herbs.


* September 10: Chef & Chef Jr. 1PM & 3:30PM

Sautéed Spinach Artichoke Dip - $40 per person

Learn Chef Gina's take on this crowd favorite appetizer. Combine Garlic sautéed spinach with a creamy mixture to bring this dish to life! 


* September 10: Date Night Out 6PM  

Fresh Made Creamy Lemon-Garlic Pasta with Sautéed Garlic & Herb Chicken Breast - $45 per person BYOB

Pasta is layered with fresh basil, cut as desired and paired with a flavorful chicken breast and creamy sauce.


* September 18: Chef Jr.: Pre-Teen (middle schoolers) 1PM 

Chocolate Chip Cookies & Ice Cream - $45 per person

With an easy recipe, we will make chocolate chip cookies from scratch. While they bake in the oven, we will shake up some soft serve ice cream: vanilla, chocolate, or mint.


* September 18: Chef Jr.: Teens (high schoolers) 3:30PM 

Flan Crème Caramel with Strawberry Coulis  - $45 per person

A combination of sweet and creamy paired with a bit of tart - these individual desserts will help students practice a few technical skills.  


* September 25: Chef Jr.: Pre-Teen (middle schoolers) 1PM 

Brunch Special: Breakfast Egg Muffins - $45 per person

So many options to create! Ingredient choices include: Ham, Tomato, Mushroom, Spinach, Cheddar, and more!


* September 25: Chef Jr.: Teens (high schoolers) 3:30PM 

Brunch Special: Eggs Benedict - $45 per person

For this classic recipe, we will create a delicious hollandaise sauce and practice making the perfect poached egg.

Each station will prepare their own tortillas from scratch and add their preferred fillings including chicken, cheese & veggies.


* August 6: Singles Night 6PM - Chimichurri Chicken Thighs with Yellow Rice & Roasted Vegetables - $45 per person

Chicken thighs are marinated with fresh made chimichurri. Practice knife skills when preparing the vegetables and herbs.


* August 13: Chef & Chef Jr. 1PM & 3:30PM

Ricotta Marinara Meatballs with Pasta - $40 per person

We begin by preparing a delicious marinara sauce then hand shape the cheesy beef meatballs. If you have a gluten allergy, be sure to email after registering to ensure only GF ingredients are used.


* August 13: Date Night Out 6PM  

Steakhouse Pasta with Fresh Made Pappardelle - $45 per person

Pappardelle pasta is made from scratch and tossed with a brandy infused tomato sauce, topped with cast-iron seared steak.


* August 21: Open Kitchen Special 1PM & 3:30PM 

Dessert Empanadas - $35 per person

Empanada dough is made from scratch and filled with delicious ingredients such as: guava, cream cheese, strawberry jam, Nutella and more!


* August 28: Open Kitchen Special 1PM & 3:30PM 

Oven Fresh Brownies with Soft Serve Ice Cream - $35 per person

Soft serve ice cream is made using the magic of science and Ziploc bags! Choice of flavors and colors.

* July 17: 1PM & 3:30PM - Air-fryer Guacamole Plantain Bites - VG/GF - $35 per person

We will also make sautéed Sweet & Smokey Chickpeas as the added topping. 


* July 24: 1PM & 3:30PM - Air-Fryer Nashville Chicken & Waffles - $40 per person

Chicken tenderloins are marinated with spicy buttermilk. Waffle batter & flavorful coleslaw are also made fresh.


* July 31: 1PM & 3:30PM - Summer Rainbow Roll Ups - VG/GF - $35 per person

Rolls are made with rice paper with fresh vegetables, working on our knife skills. Served with a peanut (or sunflower if there are allergies) dip.
